Boiled Fruitcake

Grease a round cake tin and set the oven to 325 degrees Fahrenheit (160C).

Ingredients

12 oz (340g) or more mixed fruit also extra sultanas and dates if desired.

Lb (450g) margarine

1 teaspoon mixed spice

teaspoon bicarb soda

1 cup sugar

1 cup water (or mixture of brandy and water)

 

Boil, then simmer for 5 minutes. When cold mix in:

1 cup plain flour

1 cup self raising flour

 

Bake at 325 degrees Fahrenheit (160C) for approximately 1 hour
